Pupusa-cooked hog meat is crushed to a paste consistency. This meat mixture is called chicharrón. Although it should not be confused with fried pork rind. It is also known as chicharrón in other Spanish-speaking countries. Pupusas can be stuffed with some extra ingredients. It includes refried beans and cheese. You can also use Loroco. What Is The Secret Of The Season Of Chicken?

How do you season chicken to excellence? Start with the basics. You need salt, black pepper, and paprika. But do not stop there. You need to add a pinch of Mexican oregano for a really strong flavor. Remember, the goal is to balance the flavors without overpowering the chicken’s natural flavor.

How To Make Perfect Chicken Pupusas?

Make the masa dough. In a mixing bowl, mix masa harina and salt. Stir with warm water to make corn dough. Stir the dough for several minutes. Until it is smooth and flexible. If the dough is too dry, add a little water. If it is too sticky, add some masa harina.

Divide the dough. Now, I separate the dough into golf ball-sized chunks. Then, I cover it with a moist cloth. This helps prevent drying. To make pupusas, masa dough is formed into a ball.

Stuff the Pupusa Dough. Flatten each dough ball until it is 1/4-inch thick. Put 1-2 teaspoons of shredded cheese. Put in the centre of the masa patty. You can also use beans, meat, or a combination. 

Cook the pupusas. Heat the vegetable oil in a pan. Cook the pupusas for 2-3 minutes per side. Using a spatula to ensure they fry evenly.

Serve warm chicken pupusa with curtido (pickled cabbage slaw). You can also serve with fresh salsa, and spicy sauce.

How To Make Chicken Pupusa?


  • I use masa masa for 1/3 of the 4.4 lb. containers of tortilla corn flour.
  • 2 cups of shredded chicken.
  • 2 cups shredded mozzarella cheese.
  • 2 tablespoons of chicken taste boullion.
  • 5 Tablespoons Oil
  • 8 cups water (warm)


1. In a medium bowl, 

  • mix the 2 cups of shredded chicken and
  • cups of shredded cheese. 
  • Mix well and set aside.

2. Combine the flour, 6 cups water, chicken flavor bouillon, and

3. Mix thoroughly until the substance has a soft consistency. It no longer sticks to your hands.

4. In a small bowl,

  •  Mix the remaining 2 cups of water and 
  • Tablespoons of oil. 
  • To keep the pupusas from sticking to your hands. Now, I use this to wet your hands before proceeding with the methods below.

5. Form a circular ball of masa mixture of the size of your palm.

6. Begin by shaping the ball into a bowl with both hands.

7. Take some of the cheese and chicken mixture and place it in the bowl.

8. Wrap the flour around the chicken mixture and roll it into a ball again.


9. Use both hands to press the ball into a tortilla, making sure it’s as thin as possible. Don’t be afraid if part of the chicken mixture begins to push out of the tortilla or if it splits in a few spots. The cheese will help it hold together while it cooks.

10. Once the pupusa is as thin as possible (it will never be as thin as a tortilla, so don’t worry). Throw it on a heated griddle or skillet.

11. Don’t move the pupusa once it’s on the grill. Allow it to cook for around three minutes. Turn it over, and flip it over if it’s light brown. If not, give it another minute. When it’s ready to flip, it should look something like this.

12. Cook for 3-4 minutes on the second side before removing. To keep them warm. I set them on a glass Pyrex dish and covered them with a kitchen towel.

Easy Chicken And Cheese Pupusa Recipe


  • 2 cups of masa harina (see Note)
  • 1 3/4 cups hot tap water.
  • Kosher salt.
  • 1/2 cup shredded, roasted chicken
  • 1/2 cup shredded strong cheddar cheese.
  • 1/2 cup crumbled feta cheese
  • 2 tablespoons of minced dry chorizo.
  • Cayenne Pepper
  • Approximately 1 cup vegetable oil for frying.
  • Add sour cream,
  • pickled jalapeños, 
  • chopped onion, 
  •  hot sauce to serve.


  1. In a medium bowl, 
  • mix the masa marina, 
  • water, and 
  • 1/2 teaspoon salt

Take the dough to rest in the bowl for 30 minutes. I covered it with plastic wrap.

  1. Now, in a medium bowl, mix the chicken, cheddar, queso fresco, and chorizo. Then, I season it with salt and cayenne.
  2. Divide the dough into eight pieces. Now, roll each one into a ball, working with one ball at a time. Keeping the others covered, press the dough in your palm to form a cup with walls about 3/8 inch thick. Spoon 2 teaspoons of the chicken filling into the cup. Then pinch to close. Pat the full dough into a flat 4-inch patty, pinching to seal any cracks. Place the pupusa in a baking pan. Now, cover it with plastic wrap. 
  3. Next, heat 1/2 cup of oil in a large nonstick skillet. I cook 4 pupusas over high heat. Flipping once or twice, until golden and crisp outside. Heat the chicken pupusa for about 5 minutes. 
  4. Repeat with the remaining pupusas, adding extra oil to the skillet if necessary. Serve pupusas with sour cream and pickled jalapeños. You can also use chopped onion, guacamole, and hot sauce.

Salvadoran Chicken Pupusas Recipe


  • 1 pound of ground chicken breast.
  • 1 tablespoon of vegetable oil.
  • 1/2 small onion, coarsely diced.
  • 1 clove garlic, minced
  • 1 medium bell pepper (green, seeded, and minced)
  • 1 small tomato, finely chopped.
  • 1 teaspoon salt.
  • 5 cups corn flour (instant, masa harina)
  • 6 cups of water.
  • 1/2 pound of grated, low-fat mozzarella cheese


  1. Heat the oil in a big nonstick pan. Now I add the chicken. I  cook the chicken until it turns white. I stir the chicken often to ensure that it cooks evenly. Add the 
  • onion, 
  • Garlic, 
  • green pepper,
  •  tomato, and
  •  salt and 

2. Stir thoroughly. I cook over medium heat until the mixture reaches 165°F. Now, I remove the pan from the stove. I Put the mixture in a bowl and refrigerated it.

3. While the chicken mixture cools, place the cornflour in a large mixing bowl. I slowly stir in enough water to form a stiff tortilla-like dough.

4. When the chicken mixture has cooled, add the cheese.

5. Divide the dough into 24 parts. Roll the dough into balls by hand. Using your thumb, make a hole in each ball.

6. Fill the holes in each ball with roughly a spoonful of the chicken mixture. Fold the dough over to fully surround it. 

7. Cook the pupusas in a hot iron skillet until golden brown.

How Do I Store  Chicken Pupusa?

Place the chicken pupusas in an airtight container. You can use a ziplock bag. It helps to store the chicken and cheese pupusas in the refrigerator. 

You can reheat in the microwave. We prefer it on the stove to low heat.

You can store chicken pupusas from a restaurant for up to three months with proper storage in airtight containers. As directed above, freeze the chicken in the fridge overnight before reheating.
