Preparation for Jamaican Chicken Soup Recipe

Step 1: Preparing the Chicken

  • Wash the chicken pieces in running water and then use a paper towel to pat them until they are completely dry.
  • Heat 1 tablespoon of vegetable oil in a large pot over medium heat.
  • Brown the chicken pieces and turn them over to the other side. This usually takes about 5-7 minutes.
  • Take the chicken out of the pot and store it separately.

Step 2: Sautéing Vegetables

  • Next in our same pot, we put and stir in the chopped onion, garlic, and scallion.
  • Stir the onion until it comes up as a translucent and quite fragrant, which will take about 2-4 minutes.

Next Step 3: Adding Vegetables and Chicken

  • Get the chopped carrots, potatoes, yam, green bananas, chocho, pumpkin, and corn and put them in the pot.
  • Return the chicken that has already been browned to the pot.
  • Pour in 8 cups of water and let them boil.

Step 4: Seasoning the Soup

  • Then, go ahead and add the thyme, allspice, salt, and pepper.
  • Stir the Grace chicken noodle soup mix into the pot.
  • Placing the Scotch bonnet pepper on top of the soup, of course, you have to make it be the only piece to avoid the soup being over spiced.

Step 5: Cooking the Soup

  • Turn the heat down and put on the lid.
  • Cook the soup low for about an hour while stirring it whenever you need to.
  • Have a taste of the soup and if necessary, add more salt and pepper to adjust the seasoning.

Next Step 6: Final Touches

  • Before serving, make sure that the Scotch bonnet pepper has been removed from the soup.
  • Make sure that the vegetables are all cooked tender but the chicken is fully cooked as well.
  • Hot, serve by placing additional scallions on it.
  • Have this must-be-tasted Jamaican Chicken soup with a slice of bread or a side of steamed rice for a complete meal. Enjoy the cooking!

Cook’s Note

  • Spice Level: The Scotch bonnet pepper provides an unconvertible heat to the soup. It can be either omitted or taken out earlier in the cooking process to make the soup less spicy for those who like mild tastes.
  • Vegetable Variations: You can add or replace the root vegetables with other types like sweet potatoes or cassava according to your taste or what’s available.
