Ingredients Sweet Hawaiian Crockpot Chicken Recipe

  • 1 ½ lbs boneless, skinless chicken breasts or thighs
  • 1 can (20 oz) pineapple chunks, drained (reserve the pineapple juice)
  • 1/3 cup soy sauce (low sodium recommended)
  • 1/3 cup brown sugar, packed
  • 1/4 cup ketchup
  • 2 cloves garlic, minced
  • 1/4 teaspoon ground ginger
  • 1 tablespoon of cornstarch syrups mixed with 2 tablespoons of water (serving suggestion only, use to thicken the sauce if needed)
  • Cooked white rice (for serving)
  • Green onions, sliced (for garnish)
  • Sesame seeds (optional, for garnish)

Preparation Sweet Hawaiian Crockpot Chicken Recipe

First of all, Prepare the Chicken:

  • Take the boneless, skinless chicken breasts or thighs and place them in your crockpot. If you want, you can lightly season with salt and pepper.

Secondly, Make the Sauce:

  • In another bowl, take the reserved pineapple juice and add it to the marinate. Then drop the soy sauce, brown sugar, ketchup, garlic, and ginger to the mixture. Whisk them until they are combined well.

Combine the Ingredients:

  • Follow a mixing tip where you can just pour the sauce mixture onto the chicken in the crockpot and make all of them evenly coated. Now add the drained pineapple chunks on top of everything.

Cook the Chicken:

  • Now you would cover the crock with a lid and cook it at a low temperature for 4-6 hours or a high temperature for 2-3 hours until the pieces become tender and are done.

Thicken the Sauce (In case you are interested):

  • When the chicken is done, removing it from the crockpot is an alternative to get a thicker sauce. Stir the cornstarch mixture into the freshly cooked sauce in the crockpot and set it to high. Cook for another 15 minutes until the sauce thickens.

Serve the dish:

  • First, move the chicken again to the crockpot and mix it together with the now thicker sauce. You can then serve the Sweet Hawaiian Chicken over cooked white rice, and you can put sliced green onions and sesame seeds for a garnish.

  • Chicken Thighs vs. Breast: Both are fine in this recipe, but I find chicken thighs to be more moist and flavorful in slow-cooked dishes.
  • Add Vegetables: Try throwing in bell peppers, onions, or even carrots if you want to make it pretty colorful and healthy. These vegetables brighten the meal’s sweetness and spiciness.
  • Storage: Leftovers can be kept in the refrigerator in an airtight container for 3 days. Also, you can freeze the dish for 2 months.
