    Dressing 

    • ½ cup of plain milk Greek Yogurt
    • 3 tablespoons of fresh lime juice 
    • ¼ cup of extra virgin oil
    • 2 tablespoons of orange juice (fresh)
    • 2 tablespoons of wine vinegar (optional)
    • ½ tablespoons of mustard oil (optional)
    • 3-4 four garlic cloves (sliced)
    • ½ tablespoon of sea salt
    • Pinch Ground Black Pepper according to your taste. 
    • Add more light ingredients for dressing as you want. 

    Salad

    • 3 cups of shredded or slightly grated carrots
    • 10 oz cooked or grilled Chicken breast 
    • ½ cup of shredded red green cabbage (optional)
    • 1 ear corn (serve it boiled or fresh, grilled is also preferable), must remove the Kernels
    • ½ jicama, julienned and  peeled 
    • 1/2 cup organic golden raisins or unsulfured green raisins 
    • ⅓ cups of chopped and fresh flat parsley leaf
    • ¼ cup fresh and chopped mint leaves 
    • ¼ cup hemp hearts (optional) 
    • Add more salad ingredients if you want.
