How To Make Herb &Garlic Butter Chicken Maryland Recipe

  • Mix softened butter, garlic, herbs, and salt in a mixing bowl. Finely grate the garlic and make it “juicy” so it mixes through the butter. (If you don’t have one, finely chop some).
  • Using a tablespoon, loosen the skin. The spoon follows the contours of the chicken flesh to avoid piercing the skin. And move the spoon around to make butter pockets (including on the drumstick).
  • Apply butter to the skin. Lift the skin and stuff the butter underneath. And spread by pressing/pushing on the skin because the butter melts and flows everywhere. Even if you apply a layer in the middle, it will suffice.
  • Roast the chicken for 50 minutes in a baking dish. Pour in the wine and roast for 50 minutes.
  • Start on high for 10 minutes at 220°C/425°F (200°C fan) to brown the skin. Next, lower to 200°C/400°F (180°C fan) for 40 minutes, or until the skin is golden and the chicken is cooked.
  • Baste the chicken skin twice, at 30 and 40 minutes (spoon pan juices over the skin).
  • Rest for 5 minutes before serving with the roasting pan juices as the sauce. That food is worth its weight in gold!!
  • Now, you can serve chicken in the Maryland recipe.
