  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 2 tablespoons olive oil
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 large onion, sliced
  • 3 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • 1 teaspoon ground cumin
  • Salt and pepper to taste

Prepare the Chicken:

  • Start by gently patting the chicken breasts dry with paper towels. Add a pinch of salt, pepper, smoked paprika, cumin, and oregano to both sides. Let them sit for 10 minutes to marinate as you work through the rest of the recipe.
